Palm Olein

Palm olein is the liquid half of palm oil. The refined oil is cooled under controlled conditions until the higher-melting triglycerides crystallise, and the liquid filtered off at that point is olein. Putting that liquid through the process a second time gives superolein, and a third gives top olein. The trade grades these fractions by cloud point, the temperature at which the first crystals appear, rather than by a melting point, and that is the number a buyer actually works to. It states the lowest temperature at which the oil will stay clear in a bottle on a shelf or fluid in a tank, which is a shipping and storage constraint before it is a performance one. Standard olein clouds at around 10 degrees Celsius; superolein, having had more of its saturated fraction removed, stays clear several degrees lower and carries a correspondingly higher iodine value. Each additional fractionation step raises the unsaturated share but reduces the yield, and that yield loss is what sets the price ladder between palm oil, olein and superolein. It is used as a frying and cooking oil, in margarine and spread blends, sauces, dressings and non-dairy creamers, and in soap and cosmetic manufacture as the softer counterpart to palm stearin.
